yo, here in brooklyn we mobsta's and thugs like spaghetti, my momma aint got no canning jars..
So we use da spaghetti jar.... Prego a homestyle favorite works...
and lika momma we take and cook the sauce...
then we clean the jar and fill a lil less then 2/3 full with our Brf mix and top the top off with some verm.... oh yeah den we kick it up a notch
pressure cook the jar.... 15 psi/40 mins
inject with your favorite spices..... I used GC.
let sit and wait for flavor to immerse your brf...
once your sauce has been sitting long enough to have acheived full flavor the fun begins....
wait till you see the mushroom flavors emerging inside the jar...... and once a few big ones are noticeable inside the jar.... remove the lid.... during this point everyday you should be lightly unloosening the lide to allow for gaseous exchange so your sauce can gain full flavor....
once a few big mushrooms are noticed pop the lid and replace with a zip lock back....... mist the inside of the bag lightly and remove daily.... the pictures discusses the rest

chopped and gently simmered a few minutes after the sauce is cooked down right.

ok one more question- do you keep the dry verm layer on once you take off the top and replace it with the bag, or do you scrape it off?

i'd scrape off the old dry verm barrier,
and re-case with damp verm.
once fully colonized, stick a tyvek lid on it secured by a rim band until it fruits.

i dont get all that in depth..... but just do what hip says and youll be fine.... rememeber this is the whateva forgettaaboutit invitro tek.... if i was to care it wouldnt be whateva... and too much playin with it is not forgettaboutit
