At what temp is it safe to open the PC before it reaches room temp?

As far as I know, ( LOL! which isn't far )
once there is NO pressure in the cooker
you can open it.

It's the pressure that makes the danger.

it's best to let it cool to room temp, or nearly so, still sealed.
if you remove still hot jars, they will suck in [unsterile] air while they finish cooling.
usually the filter will protect you, but why take the chance if you don't have to ?
with quarts of grain, just wait until all the steam has gone, then you can shake them.

Personally, I'm lazy and have never lost a jar due to that. All of my jars have set for long periods of time w/o being inoculated. At least a week. They never contam like that.
I have some jars here from like 2 weeks ago, still good

Actually I was reffering to shaking the jars while still warm because it's easier to break up the lumps this way. So the question was how soon could I open the pressure cooker before the contents were at room temperature.

If your using a PC with a weighted jiggler then just take it off for a few minutes until the steam spewing out has slowed. Then crack it open, but be careful of the steam as it will burn you. Its extremely painful, you'll know what lobster feel like. Then shake your jars, but again make sure your using gloves
