Glorified grilled cheese

now this sounds awesome! and im sure it will be good with any kind of cheese

GRILLED CHEESE WITH GOUDA, ROASTED MUSHROOMS AND ONIONS

 

8 ounces mushrooms, sliced
1 medium onion, sliced (the sweeter the better)
2 tablespoons olive oil
salt and pepper
4 tablespoons butter
4 slices bread of choice
1 cup gouda, shredded

 

Preheat oven to 400°F.

On a baking sheet toss sliced mushrooms and onion in olive oil. Sprinkle with a few pinches of salt and pepper. Bake in oven for about 20 minutes, or until roasted to preference.

In a skillet stove top, melt 4 tablespoons butter over medium heat.

While butter is melting, assemble sandwiches. On one slice of bread, layer shredded gouda, the roasted mushrooms and onions, then more gouda. (Layering this way ensures that the melty cheese will hold the sandwich together.) Salt and pepper to taste.

Top with the other slice of bread. Lightly press together.
In the melted butter place one sandwich down for one second, then gently flip it over to the other side.

Repeat with other sandwich. Cook for about 2 minutes, until lightly browned, then gently flip sandwich on other side, and cook for an additional 2-3 minutes, or until cheese is melted and sandwich is browned to preference.

Crap that sounds good. too bad i didnt see this before i wondered around the grocery for an hour looking for something for supper that didnt break the bank, looks like i have lunch tomorrow. Thanks Ms. H!

noo but that sounds yummylicious too!! im guessing you just add whatever meat you want to it like pepperoni or  sausage? maybe some grilled onion and peppers too and of course mushrooms!! lol

My mon used to make me something similar when I was a kid.

She would put a little tomato paste on the bread under the cheese. Some peperoni slices on top. Also I think she put a little oregano, and basil sprinkle on top. Then they would go under the broiler until all melted, and they served open faced.

I hadn't thought about those for years. They used to one of my favorite lunches. Damn it, I really am getting hungry.

I do that with Naan bread when I don't feel like making dough, usually the garlic flavoured; big spoon of spaghetti sauce, onion, pepper, hot salami and cheese; throw in the toaster oven... if the cheese doesn't brown to my liking I take the TORCH to it.

most gluten free breads are very poor substitutes for good old wheat and yeast breads

 

this recipe sounds like the cure for that malady!

 

gluten issue sufferers take heart! another hundred years of experimentation and we'll be eating almost normal again  :)

I have much sympathy for those that don't tolerate gluten well.

I would think it is a difficult adjustment to make, living gluten free that is.

start with no beer and no pizza

 

and it gets worse from there.

 

the worse thing is how damned inconvenient eating right away from home is.

 

and that's really the only bad thing about the gluten thing - once you've whipped it - is the inconvenience

 

I swear, if I ever get really bad news from the doc my first stop on the way home from his office is the pizzeria/beer joint.

If you do the old school frying method to the grilled cheese,

slow, slow, slow works best.

A restaurant near me turned me onto the awesome idea of:

 

1. When you are finally one flip away on each side from done, spread parmesan cheese and flip.

2. Repeat.

 

Oh, it is exceptionally bad for you.

Christ it tastes good.

Someone taught me the trick of spreading mayonnaise on the bread to fry in, instead of oil
