Easy Souvlaki Marinade

I stole this from a Greek restaurant a few years back;

3/4 cup Olive oil (virginity doesn't matter)
1/2 cup Lemon juice
2 TBSP Oregano
2 TBSP Garlic powder
2 Tsp salt
2 Tsp black pepper

Mix well, marinade in a gallon ziplock bag for up to 24 hrs.

I use this with boneless, skinless chicken thighs, fish or pork. I ALWAYS grill my meat with this recipe The olive oil will flame up on you so keep an eye on that, but it puts a nice, smokey flavor into the mix.

Slice the meat up and make some Gyros!

I forgot to mention that this is also excellent for kabobs, which is what souvlaki really is. I just prefer gyros.

Easy Greek Rice (pilafi)

1 box Uncle Ben's chicken rice, or whatever chicken rice at hand
Lemon juice to taste, I use a TBSP

Cook rice as directed, stir in lemon juice.
This is really awesome with tzatziki.

BTW, I'm not Greek. I like food, it's a habit I acquired as a child that I can't seem to shake off!
