Boneless, skinless chicken thighs (I like these, but chicken lips will work too)
Tossed with salt, black pepper, garlic powder.
Stop Light Bell Peppers (the colorfull ones)
A whole lime.
Grill the chicken.
Julienne the onion and bell peppers.
Rondelle the lime.
Place grilled chicken flat in a 9"x13" baking pan, arrange onion and bells around the chicken. Top each thigh with a slice of lime. Cover with foil, bake at 350F for an hour (60 minutes for you metric folks.) Remove foil, spoon in Salsa around the chicken, bake for another 20 minutes ( 1/3 of an hour. . . Aw screw it!)
Serve over rice w/ Cuban Black Beans as a side, or whatever.
I hv also laid down a bed of Minute Rice and baked it, it was mas o menos. Better to do it seperate.
I usually toss in a half teaspoon of Cumin in my rice for some 'bottom' notes.
