I'm oven roasting an 8+lb bone in turkey boobie in a cast iron dutch oven.  Mashed taters, gravy, corn, stuffing, and some Rhodes Rolls.

 

Smoked cheeses, crackers, deviled eggs, and smoked salmon for appetizers, while we listen to the football on the radio.

Happy Gratitude Day !

 

Our gathering has gotten smaller over the years, but the Grateful thanks have grown. Hope you all have a great day.

We are having turkey, cornbread and cherry stuffing, yams, green beans, rolls and gravy, and apple cranberry pie for desert.

(and probably a lot more, including a small vegan surprise from our friend who for some reason does not seem to mind our refusal to make a vegan thanksgiving dinner....................

and brings her own.

I hope everyone has a lovely day. This year will be a small gathering comparatively. My family is shattered and too many people have attitudes with others and are not welcome unless they can lay aside the crap.. Sad really. I am thankful for those that will make it.

Our last 6 meals in a row have had some kind of turkey in it.  The rest of the meat is getting vac sealed, and is going in the freezer.  It will probably get turned into sour cream, turkey, and green chili enchiladas in around 2 or 3 months, maybe longer. (about the time turkey starts sounding really good again)

 

We are making some beef and bean burritos tonight :)   Going to use some pressure canned meat, and beans, so all we have to do is open a few jars and make the tortillas. (cheese is already shredded in the fridge)

 

So how did your bird turn out, Wharf?  Do you brine it at all before you smoke it?  How did you season it?   

LOL, I'll stop with the 20 questions now, but I do love me some good smoked bird.....

The trick with smoked turkey, I've found, is to get 2 packs of cheap bacon and weave a mat of bacon on top before putting it in the smoker - the bacon is generally to smoky to eat, and dry and brittle, but all that fat drips onto and through the bird while it's smoking for 8 or more hours ... good stuff, but I quit smoking on T-day, as there's no gravy  :(  and that's a crime. 

 

That's why I grab two when they're on super sale; I'll defrost #2 in a month and smoke that baby for new years .... mmm ....

I'm with you about the gravy.  And the roasting pan for the big ones, or a dutch oven for the smaller ones does a great job of saving all those great drippings....    Any of the drippings that don't get used up in dinners gravy will get refrigerated until it's time to turn the carcass/scraps into broth.   There is all kinds of great flavor in those drippings, so I try not to waste any of it.

 

So Soliver, do you like your gravy clean, or do you like it dirty (with giblets)?  I like it both ways myself, but my wife is not a fan of dirty style.

I totally agree that no gravy would be criminal. We make enough to last through the leftovers as well, because hot turkey open face sandwiches with gravy are a day after tradition..................

and Juthro, 

 

I personally prefer it dirty, but because nobody else does, I give in to majority rules, just like the stuffing in the bird I also prefer, but have lost out on because the rest of the family wants "dressing".

 

I have now killed all the leftovers, but there is still a carcass in the freezer for turkey noodle soup in a month or so.

Beat me to not beating it ...

 

I'm sort of a pan-gravy style ... that is, in the lexicon of sexuality (and if gravy isn't sexual ... what is?) - so I'm Pan-Gravy (not PanSexual, although it would certainly give me a lot more options.  That toaster-oven has been giving me the eye the past few months, eh?)

 

I make it smooth for political purposes.  What KILLS me are anusi who follow a goddamn gravy recipe to the letter, leaving 10 people with like 1-2 cups of gluey-gravy.  Man ... I stretch that shit THE FUCK OUT!  It's goddamn gravy, right?  When it's all said and done, no one will remember me dumping a few cups of heavy cream and some chicken broth concentrate in them drippin's as long as the gravy lasts as long as the stuffing in the fridge . . .

 

(hands up if you invariably toss leftover stuffing because you're outta gravy, right?)

 

I'd still trade all of it for a bacon-smoked turkey, but I'm out-voted in most everything around here that requires true class. 

 

Still, I guess it beats eating that turkey alone (or DOES it?) . . .

 

Mmmmm .... me, a 20 lb bacon-smoked turkey, a tarp, and a wireless internet connection?  Forget about it.  Or don't, and tune in to my live webcast Christmas morning.
