It's sous vide cooler hack. Basically attaching a sous vide to a insulated beer cooler to increase the cooking capacity (up to 40l) and still be able to maintain cooking temps within a few degrees. It also reduces evaporation. I could see this as being an excellent way to get perfectly pasteurized bulk subs everytime. Just set and forget then pull it out in the morning to cool.

I saw this device on the Alton Brown cooking show


He mentions that it would be good for pasteurizing stuff in bulk. I swear at the instant he said bulk he gave a slight nod and wink to the mushroomheads

Do you guys really think this would work? I'm considering gathering the materials and trying it.. 

Only reason I'm considering is because it seems I'll be able to prep subs in my room. Don't want anyone in the house wondering what I'm baking lolllll

OneDiadem has been talking about this for awhile; says it's the most awesome thing for pastuerization since sliced bread. Revolutionary.
