Zucchini patties

Really easy to make. My dad's gf is growing zucchini so I dug out all my recipes.. I had done these before and my dad really liked them so made em again and they ate them all.. the smell of em is still lingering.. mouth has been watering all night.. lol.. but you basically shred your zucchini and add egg, onion, and cracker crumbs. I omit the salt. Then fry in oil.. But you can add anything.. cheese, bacon or sausage would be good too! And it's roughly one egg per cup of zucchini.. I should have used another egg they weren't holding together real well. Tomorrow I will be making quiche and cobbler so stay tuned . Lol

I like making these too! The key to holding them togther I've found IS adding salt, and then letting the grated zuchinni drain for at least an hour to get most of the moisture out. Then mixing with other veggies and frying. Yum...

I don't use salt much.. if food is too salty I can't eat it

I wonder if you can squeeze them out in cheese cloth to get the water out ?
