I was pumping a few hundred pounds a week for 2 years, but when my daughter was born I had to take a step back to make time for family. During my vacation, I researched heavily into processing equipment to simplify throughput and reduce my time spent growing way more mushrooms.
I'm going to be releasing a multi-purpose commercial mushroom steam sterilizer kit in the next month or two, after I work out any kinks with the stainless manufacturer. These kits are good for almost any size operation, until you need a room sized autoclave to process your material. You could even use them for growing a lot of cubes with pasteurization or sterilization, by adjusting the wattage to your heating element.
I picked up my new boiler and thermal controller yesterday, and will have stock tanks later tonight. My goal is 1k lbs a week, and only hire someone to help harvest. I will be mixing sub with a ribbon mixer, sealing with an automatic band sealer, and mixing sub and spawn with a home made spinning cylinder; automation is the key to success. I'm using a high pressure misting pump for humidity now, from aeromist.
