Mushroom Cap reversal

A very rare incident: Pleurotus Mushroom Cap reversal.

 

At first I though I had bought Grifola Frontosa spawn. I was wrong!

 

History:

After filling bags with straw soaked for two weeks in lime water, I left them in the darkness of my garage for a week at 57F, and then put them In Martha inside the boiler room with 90% humidity at 70F.

Only the first bag out four presented in Martha this curious Cap reversal with yellowing at some ends.

 

Anyone in knowledge of what caused this phenomenon?

 

PS: Aerobic, anaerobic pasteurization in lime was Perfect cropping good but my second flush is much smaller and rather reluctant. Very little white mycelia was shown at the outer bag... anyone in knowledge of the the causes of white mycelia absence?
