So my Wine Cap grain Spawn is ready to go to bulk.
Should I just do the same thing I did with my oysters and hydrate/pasteurize some hard wood pellets in bags or should I look at adding some nutrients and sterilizing?

Grain->HWFP (hardwood fuel pellets/ hard wood)->woodchips in a bed
I've never supplemented it. I think it prefers being outside in a woody bed.

Sounds good. What is the usual turn around on fruiting in beds?

You'd be better off researching. If all things are right and let's say you do it in the spring. Or before it gets too cold (preferably a month or 2 before real freezes). Should be another 2 seasons or so. Spring to fall, or fall to spring. Believe they like colder temperatures.
I did a bed outside and overfed it. They won't fruit if they have food. So I'm waiting almost a year now.

Alright with lack of guidance I decided to be the scientist. I shook one of the bags. Will report back on recovery and population.
