I currently grow Blue, Snow and Italian Oysters in one gallon food grade buckets on HWP. I incubate and fruit in cooler temps. Incubation area runs 54f-58f. My fruiting chamber has gotten down to 44f and the Blue and Snow Oyster still grow. I've since added a small heater set to 52f so they grow a bit faster but curious anyways.
What is the coldest temps you've managed to pull off? Does higher humidity or less fae help them keep going if temps get colder? Have you found a sweet spot?
