Unmodified monotub spawned 14 days ago 50 50 coir and clean cube spawn. Day 10 I noticed Knotts so I opened and fanned, this bright white growth appeared the next day, now in my experience if this was a contamination, it would have turned green by now. But here we are 3 days later and no bad smells. I even see pins growing from the bright whiteness. It has been really hot here lately.

Negative, not contaminated and you have Knots, and Pins coming.  I can even see the yellowing happening, you are close.  You have a bit of overlay, but No big deal and should be a giver.  The mycelium going bright white is a great sign of health (increased Air), don't be worried, you are on a good track.
