Variables which affect water weight? / Wet weight to dry weight ratio?

Ive been working with gt on a substrate of year old garden compost coir and vermiculite-
An example- the other day I harvested 33.4 g wet-, was expecting 3.3 grams dried, yet they dried out to 2.8- which seems to me to be a bit more water than normal no?
Is this an indication of a lack of nutrients somehow? Or another issue
I'm running around .84-.86 wet to dry conversion on average- though I had a recent flush down to .79 (dry weight / wet weight)....
I'll be playing with using buffalo shit in the next bulk I run so I can see if the substrate composition makes a difference.

Genetics that produce dense stems/mushrooms overall..... and definitely good nutrition......
The 90/10 is an approximation anyway...IME.......my mileage has varied like that...
