Nah, don't dunk till later on after your first fruiting.
White and yellow corn will colonize the same, but if you are looking for signs of myc, it'll show up better on yellow corn....

I Would Dunk For 6 to 8 Hours . After Dunking , The Myc. Seems To Get More Aggressive When Spawning And Using For Fruiting. I Like To Mix A Bit Of COARSE Vermiculite When Using Grains . It Makes For Holding Better Moisture In My Projects But I Don't Like To Use Grain At All Unless I Am Mixing It With Coir / Vermiculite for Spawn. Just Layer Or Put The Whole Amount Of Grain IN The Middle And Two Layers of Coir / Vermic. ON Top And One ON The Bottom. Works Great. I Love The Simplicity Of Wheat Berries But The Outcome Of WBS.

I wouldn't dunk prior to spawning myself.

What I do suggest, is a day before spawning, shake that popcorn jar up good to break the grain apart, then let it recover for that day before spawning.
