2lbs lean ground beef
2lbs chicken thighs, chopped
whole bunch of oyster and shitake mushrooms, 1 cup each once destemmed
2 onions, one red one sweet yellow
1 large old bunch of green onions
2 8oz cans tomato sauce
2 14 oz cans stewed tomatoes
1 can kidney beans
1 can adzuki beans
2 habaneros a jalapeno some wierd red pepper, 4 cerranos
shelby spice mix plus extra in the cabinet
basically same as above, just doublng the recipe on the back of the shelby packet and improvising...

a burning man chili cook off is an awesome idea. had no idea mycotopia had its own camp.. hhmm go figure.
There hasn't been one as of yet, certainly seems like a worthwhile goal!

You bet. Id enter my 5 alarm 3 day ass burn chili. I'm the only one in my house that will eat it (sweating the whole time), too spicy for the wife and kids.:lol:
Beast you are right, It seems that all sauces,chili's and soups do taste better the longer they are stored properly.

also... vegan/vegetarian white chili recipe that omnivores seem to like too:
2.5C DRY white beans (cheaper)
7 or 8 C veggie stock
2 bay leaves
6 chopped garlic cloves, 4 whole
olive oil or cooking spray for sauteing veggies
3 or 4 poblano chilies
1 or 2 serrano chilies
2tsp cumin ()ground()
S&P to taste
1 10oz can tomatoes and green chilies (ro*tel is good)
1 TBSP tomato paste
1 10oz can well drained hominy/posole
1 large eggplant, peeled and chopped into 1 inch pieces
Cook da beens w.enough stock to cover them by one inch, w. bay leaves, in you PC for 18-25 minutes at 15PSI (or 1-1.5hrs conventional)
heat oil or spray in skillet
add onions, saute till softened
ad chopped garlic, chilies, saute a lil bit more
add cumin and oregano.
Add this to tender beans
deglaze vaggie skillet w. a lil stock, then pour stock into bean pot too
Bring pot to boil, then simmer adding S&P
Puree 3 or 4 ladles of the beans in a food processor with the can of tomatoes, whole garlic and tomato paste
Add hominy and eggplant to beans and simemr half covered stirring occasionally for about 10 mins or until eggplant is just tender
Add puree dmixture and cook at low simmer for 5 or so minutes.
serve, eat. Yummy!!
add whatever condiments you like, and you can multiply the recipe as many times as you want up to 5.

Getting ready to make another batch, nothing to add to the above recipes other than its worth repeating again and again!
