This one's just for you, hip....
Take one possum, cleaned and quartered- preferably trapped and fed corn for a week... Parboil for 10 minutes, let set in fridge all night. Skim fat off and...
Braise in cast iron skillet, in olive oil until well browned...
Add:
1 can Rotel
1 can crushed Italian tomatoes or several fresh and some Italian seasonings...
1 can ripe olives
1 zucchini
1 green bell pepper
Several of your latest edible harvest...or a can of whatever shrooms....
(drained if you use canned) Dump other cans in with juice.
Season to taste, simmer for 30-40 minutes, until possum is tender.
While simmering, make your favorite pasta. Mine is angel hair. Serve Possum on the plate, sauce on the pasta.
This is really tasty, and works with 'coon, too.

All the possum in my neck of the woods look like they have rabies. I wouldn't touch one let alone eat one :P

That's why I suggest trapping and feeding- it separates out the sick ones. Truly, other game is preferable....
I was really pullin' hip's leg on the possum part...
Although I HAVE et a few...
