Canning and Freezing for the Winter Months

Hey all, last couple of days we have been preparing our winter stash of veggies and such. Today we are canning Tomatoes. First we scald the Tom's in boiling water for about 2 minutes to help get the skins off. Then slice up to desired chunks and cut up three or four large green peppers and cook over low flame for a couple of hours until the mix stops foaming(skimming the foam off every 15 minutes or so). Now when its done we can them, we dont use a pc, we do it an old fashioned way. We boil the jars and seals for a couple of minutes to sterilize and get em good and hot. Pour the tomato mix in to the jars add 1 tsp salt and cover and seal. Havent had a bad jar yet in the 20 years we have been doing this. Great for all of the chili's, spaghetti sauces, etc....
Over the next few days will be freezing vegetable packetts for soups and stews and such.

My concord grapes are ready also, going to make some home made grape jam probably next week. I love this time of year, makes me feel like I'm actually getting something done worthwhile. :)

Mmmm...... concord grape jam sounds delicious. It seems like you found a hobby to share with the Mrs. That is sweet.

The Funny thing is we have been doing this every year for 18 years. Been married for 21 but didnt learn for the first three of them. Its a very enjoyable hobby for us and were teaching our children a valuable life skill.

Yes we do but its full of Peaches we froze, and meats. We also are getting ready to make packets of frozen vegetables that will take up the rest of the room. Besides I like the flavor of the canned tomatoes.

Well Its 3:45am and I'm done for the night, Got one bushell done and one to go. Got 20 quart out of 1 bushell, not bad. Means well have 40 to store this year. To be continued.............

Not really eating good, just eating good stuff. We are preparing for the winter months making it so I dont have to go and buy allot of stuff when we are barely getting by. Many meals can be prepared without ever having to leave the home. I love being somewhat self sufficient, If I could only afford the land I would have a farm no problem. :)

we HAVE to stockpile out here-
we could be snowed in for days,
no water, no power, no heat
and no one coming to help.

I know what you mean there Hip, weve had several stretches like that over the last 9 winters since we moved here. Luckily several places are within walking distance if we absolutely had to get out of the house. I keep a couple of cords of wood on hand to keep the house warm with our wood stove during those unpleasant days.

Well all said and done we got 37Quart from two Boxes (not quite 2 bushels) of tomatoes. Lots of Chili, spaghetti sauces and other dishes to be made over the cold months.

we just did up a bushel of apples- golden delicious. $10/bu.
made apple jelly, apple butter, maple-apple jam, cinnamon apple slices in light syrup,
and a few apple pies to share with our friends and neighbors.
good eatin' indeed.

just seen the thread. that row of tomatoes is rly nice. Did you grow those as well. I have just began canning tomatoes this year. I am impressed. that'll put some food in the pantry. good going:bow:

Unfortunately no we had to buy them, my tomatoes hardly produced at all this year. Was a cold summer here.
