the trick is
not to open frozen packages
until after they warm up to room temp.
that way no condensation gets inside.
gotta be air-tight tho'
else cold material will
suck moisture out of incoming air.
so it takes time,
not a quick easy grab like storing at room temp.

That's a good way to save pita bread for a long time too.:pirate:

FOAF likes pints or quarts sealed up tight with a dessicant bag on the bottom and one on the top and aluminum foil all around to keep light out.

For long term storage, air in the jar is displaced with CO2 via candle pours. FOAF has just recently aquired a "can" of CO2 with a long straw that is used to keep wine fresh after opening. FOAF is very glad his sister in law is a drinker of fine wine and turned him on to these cans. These CO2 cans are WAY cheap and WAY easier than doing candle pours.

FOAF advises in the absolute strongest possible terms that breaking your stash up into OZ containers is a very risky way to avoid a little work splitting things up come gift time.

Based on past experience storing cured buds, FOAF thinks the freezer is far more trouble than it is worth. Waiting until your jar comes to room temperature is, in his opinion, a crappy way to spend a few hours that tends to end up being ignored.

I keep mine in quart jars (as many as I can get in there) and put a deccisant pack in there. I put all my full jars in a sturdy Timberland shoe box, which even says on the box that it is made from recycled high-grade cardboard so it can be used for personal purposes. I think they had us hobbyists in mind. I've never had any problems this way as long as they were bone dry when I put them in there. If there is any moisture in them they will mold big time. I've got some that are a year old in a month and they still look as good as when they went in.

I think chefs will agree, dried foods, includijng mushrooms, are best kept in tightly closed jars. I like to tape a small bag of silica gel under the lid.

We got another chef in the house, cap'n? CHEF'N IT UP! I think air-tight jars are the best thing since... well... fuggit - airtight jars are better than sliced bread...

But yes, dried foods are best stored air tight. Dried anything...

Wouldn't think you'd need to freeze unless you are in extreme climates of some sort though. Just stores in air-tight whatever(s) in a dry, some-what cool area (below 80).

Now if only I could figure out a way to keep my coffee hot for more than 15 minutes.

I know its off topic, but check http://www.usatoday....at_x.htm?csp=15 They used to have these, self heating coffee cups. Til they started to explode..

To chime in, I just store in ziplocks air-tight, and place that ziplock within another bag. It's worked so far..

foaf has been cutting up his mushrooms, drying with a fan till cracker dry, and putting them in a pill bottle with dessicant in the top and bottom...but after being put in the bottle for a day or so it seems like some of the moisture somehow gets back into the mushrooms. he's not sure what to do about this.

Well I for one would have to say that if I had a large amount of mushies that were not going to be eaten anytime soon I would dry them on a fan, then desecant dry to cracker status, and then seal in foodsealer bags. Then I would get the vacuum sealable mason jar lids and then put the foodsealed bag in the mason jar with the foodsealer lid and seal it and bury it somewhere where you will remember it!!!!!The cops won't find it and you can have as many buried as you want( like bury them close to marked trees on your property and such)

Haha, that's almost exactly what I do.
Burried up at a good friends cottage tho.
Found out the hard way that ziplocks wouldn't cut it :( So I do the foodsaver bag, put in a jar with dessicant, and then put that in a wooden box, and bury.
Nice to have a good stash up there for the summer.
Works great!

You could always vacuum pack in quart jars and fill pvc tubes (with endcaps) with 2 or 3 quart jars and bury that.

Reverend,if the jar and bag both were sealed airtight with a foodsealer you would not need any dessicant, would you?

I am sure everyone here has seen those vacuumsealer jars that are plastic at wal-mart and the like but on the net i found these mason jar foodsealer lid shits all you have to do is choose wide or regular mouth lids!!!!Here is the link i just dont understand if this is the lid itself or what, but i am going to call them tomorrow and find out!!!!!

That is the attachment. You still need the metal lids.

You place a metal lid on the jar, then place that attachemtn over it, hold it in place and press the button until the cycle is over. When you remove the attachment, you should hear the lid pop (signifying a vacuum in the jar).

If the fruits are totally dry and you vacuum sealed into glass jars, then you do not need dessicant.

The fact that my Talisker, Aberlour, and Highland Park single malts are in separate bottles constitute evidence that I intend to open a tavern...

I tryed this and it works pretty good. I got one of those resealable airtight jars, ya know the ones with the clamp and the rubber around the lid. I just dried my mushrooms tell they where crisp and then I threw them in the jar. Then I got a couple oxygen destroyer pouches that you get out of bags of jerky from the store, and I put those in the jar with the mushrooms. Then I found a dessicant pouch that was in a bag of trail mix and I put that in the jar too to help eliminate humidity. Overall it has worked really well.

A dessicant packet and an oxygen obsorbing packet should handle anything so long as theyre cracker dry and its airtight

Ive had metal lids rust before, so i wouldnt bury without some protection. Maybe shrooms/bag/jar/bag/box/earth
