Then store in sealed mason jars with silica gel pack taped to the inside of the lid.

Not to distract the main idea here, but for vacuum stroage I found a link to this site in the archives a while back http://www.pump-n-seal.com/
It looks hokey, but it's perfect for vacuum sealing pints and half pints. For the low price, I believe it was money well spent.

Long term NEEDS the dessicant.
but i always plan that i wont need them soon

Fan does stage one quickly, dessicants get 'em cracker dry quite quickly.

Yep. Although I use straight dessicant.:D
fan dry until cracker, then store in an airtight container with a dessicant pouch :-)
