i believe the compost and the worm bins benefit from a variety of "salad" waste , in other words multiple sources: vegitable scraps, coffee grounds from starbucks, cardboard, washed sea weed collected locally, and ground up wood chips as well as spent mushroom blocks so there are many sources as well as biochar which traps or stores the nutrients.. Worms are in bins and in the compost pile.
