Update:
Thanks for the feedback all. After the advice I decided to try casing half in coir. Previously I had used pastuerized straw to case and had some pretty good results. I moistened some coir. Cased half and here is what happened:
Pins formed on the straw side first, then shortly after on the coir side. I had just harvested two monsters from the straw side before this pic. So I actually got pretty equal amounts from both sides.

How deep was your casing ?
Looks like it didn't do a thing,.. because it was to shallow !

Only a couple of inches deep in the middle. This was just a little experimental nugget to address the water droplets. Normally they fill the cat pans.

I've seen mycelium sweat those clear dew-like droplets many times , especially on Panaeolus and it's almost always on the non-rhizomorphic growth...I'm only guessing that it's a defence mechanism against drying conditions in exposed areas , which can later be re-absorbed...
