First dragonfly's recipe is the fucking bomb for a vegan Mac n cheese dry mix
Must use good quality blender to get cashews to flour consistency or spend the little extra and go some place like trader joe's and get chashew meal (flour). Can be a little salty but I like it that way.
Here's the un-cheese mix recipe
3 cups raw, organic cashew pieces (coconut meal/flour)
2 cups nutritional yeast (I like Red Star or Vegetarian Support)
3 tablespoons seasoning salt
3 tablespoons garlic powder (not garlic salt)
3 tablespoons onion powder (not onion salt)
8 tablespoons arrowroot powder
1. Using a very dry blender, blend the nuts until they are very fine.
2. Add all ingredients, and blend in batches of about 1 cup.
3. Mix in a dry container.
4. To make sauce, add heaping 1/2 cup mix to 1 cup water, and stir over heat until thickened.
Use less water and add salsa for queso dip. Pour over hot veggies and/or pasta. Spread on vegan bread and toast for grilled uncheeses, or look up my enchilada recipe and use it that way.
You can keep this tightly covered in the fridge for about 6 weeks.
Get used to working with the mix above so you know how it reacts when cooked before making the dip below.
For cashed out queso
1 cup dry mix
1 cup water
1 cup THC infused coconut oil
1 small can diced green chilies
Mix 1/2 cup of mix with melted coconut oil and small can of chillies don't drain
Make the other 1/2 cup as directed by dragonfly's recipe above
Mix in the coconut oil cheese mix and heat till thoroughly mixed.
Will be pretty thick heat carefully and stir often. If too thick can add a little salsa. Small amount at a time but I like it thick
You can pour it in a round container sprayed with some non Stick spray and chill it over night and take it out run edg of knife round rim/edge of container and the smack container dr down on plate to un old it and use it like a party cheese spread on crackers. Just will start to soften as coconut oil hits room temp but why let tit set that long...GET IN MY BELLY!!!
Best to use the best weed you can with this recipe. The green color that you get from too much weed material on lower grade weed, the chlorophyll, can make it a funky color! You can play with adding in small amounts equal parts turmeric and mustard powder but you have to be careful can eventually throw off flavor!
