Early turkey, Thanksgiving is my favorite, and I couldn't wait.

Brine:
3 quarts apple juice
6 quarts cold water
1 quart turkey stock
1 Angry Orchard ginger cider
Half cup salt
2 T butter
2 T pepper
Handful of crushed garlic
Handful of diced sage, rosemary and thyme

Melt butter in pan, add garlic and herbs, simmer till fragrant. Add stock, bring to a boil, add salt and pepper, simmer for 5 min, remove from heat and cool.

Combine garlic herb broth with rest of brine, put cleaned turkey in brine. I used trash bags and my autoclave, because all my buckets are dirty. Plus this has a lid to keep out critters (left on porch overnight). Brine for 12-24 hours, I think mine got 16 hours.

Remove turkey, pat dry.

Butter rub:
Melt almost a full stick of butter. Combine with garlic, and sage/rosemary/thyme, and heat it in the microwave or in a pan to infuse butter with goodness. Let cool in freezer or outside until mostly solid. Rub all over dry bird.

Cook at 280 without lid till top browns.

Add bacon weave.

Put back in oven with lid until thigh temps reach 165 F, then for another 45 min. Done!

TurkeyRanch,

 

My father tends to get far too tipsy when he cooks for major holidays, so I don't know if I will eat the turkey. I will pass along the recipe, however, but he's stubborn and likes to do things his way. He's a great cook when he puts his mind to it, though.

 

This is a man who used to only grill burgers, keilbasa, and such on the BBQ, but he learned himself a thing or three.

 

Now I'm a man who also knows how to do a bit of cooking. Nothing spectacular, but I can sure as heck follow directions!

I'm thinking a ten strip, Safeway, and the inbred family from hell?

 

Still makes me embarrassed of my home town.

Almost ready to eat, birds in bed, sun setting, and my spliff is about half burned down. I snacked on some of the dark meat, and it is pretty dang good.

Cyclenaut, bring back the bacon weave! (And the tenstrip trips to grocery stores!) Only good can come of it. Maybe bring back the ten strips, and already have the ingredients on hand when your tripping. Or not, it might be more fun the other way around.

There will always be a few turkeys from your home town. There's good and bad in all of us, but we can learn from the bad we've done to try to be better. So long as there are a few good people from any town or locale, those are the people we should pay attention to.

 

Of course, when the stupid and the bad come up in the news I think it's fair to find it interesting, funny, or enjoyable, after all.

I like the recipe TR, it looks delicious. Nothing like a good brine to add great flavor and make your bird stay moist.

I plan on smoking my bird this season (like Warfrat, great minds think alike, lol). I LOVE smoked turkey, and when we are done the left overs make the best smoked turkey soup.

I smoke my turkey as well. Brining is a great thing. A must when we do just the turkey breasts.

I usually put a pan under my turkey full of veggies like carrots Brussels sprouts turnips garlic onion and the like. Let them cook down for several hours as the drippings fall into the pan. When the veggies are nice and over cooked I remove the pan drain the excess drippinG's and throw it in the vitamix with some garbanzo beans and bam....smoked vegi hummus.

I believe that tenstrip and mutant Safeway family was a story includes a smoked bird at some point. . . Lol.

I would have done that, but my BBQ is still at the old homestead. Smoked turkey is absolutely awesome, and my favorite way to cook em. I will probably smoke one after thanksgiving when I get my smoker, because I will be busy for the actual Holiday.

No problem patch, the hardest part is flopping the weave on the turkey. You get like one shot lol. Aim well. Happy Turkey day guys, gobble gobble.

Funny this got bumped tonight, I have another turkey brining to cook tomorrow. The first one was so good, and we are all out of leftovers. . .

I think I am going to smoke this one, now that I have my BBQ.

Turkey, check.

Bacon weave, check.

Smoker, check.

LSD, check.

Now all I am missing is my old tripping buddy. All in good time.

Decided to cook it in the oven, cause we got a late start today. Bacon will still feature predominantly. I think it's time to bumb the bacon thread.

So how did your bird turn out, TR?

All this talk of poultry made me pull a whole chicken out of the freezer and stick it in the smoker.

Smoked for a little over 2 hours with a blend of apple, cherry, hickory, and maple wood.
