Some homemade garlic black pepper beef jerky I made today.

Here's a chicken I done a couple nights ago also, rub I keep secret, but the wood was hickory and apple.

I mopped the chicken with raw apple cider vinegar that has part of the mother culture in it, never tried it before and I have to say it beats regular acv 10 fold.

The chicken sounds pretty good. What does the vinegar do to the chicken flavor, and what is the " mother" culture mean?

Unfiltered, unpasteurized cider vinegar will have a cloudy layer at the bottom of the container, it is called the mother.  It is a mix of cellulose, proteins, enzymes, and concentrated acidic bacteria. 

 

Some say that is where all the health benefits of consuming ACV come from.

Yep.
As for taste and health, It has good properties to it, If I'm not mistaken, it can act as a scoby of sorts to create it's own slice of ACV

The vinegar is the mop sauce with others herbs and stuff added as the chicken is smoked and is mopped on as a flavor agent and a form of keeping the meat moist.

Kombucha, has all the benefits of ACV, plus it tastes a lot better if you're into drinking it. I go through a case a week of GT's ginger. You can make it yourself rather easy too.

Unflavored kombucha can be used for cooking as well, adds a different flavor profile to barbecue.
