Best recipe I have found in a while

Came across a similar version of this on face book. Modified it a bit and damn this stuff is good!

 

Spinach Ricotta stuffed chicken breast.

 

4 chicken breasts (large)

one 8 0z container of Ricotta cheese

Big pile of fresh spinach leaves

Parmesan cheese

Sliced sharp cheddar cheese

 

Cook the spinach down until it reduces and softens, and mix in the container of ricotta cheese and mix it well. I throw in about 2-3 tablespoons of Parmesan cheese as well and season it to taste.

 

Slice the chicken breasts across about 1/2 an inch apart but not all the way through. Take a spoon and insert the cheese/spinach mixture into the slices the best you can. Cover with sliced sharp cheddar and bake at 400 for about 35-40 minutes or until done and the sharp cheddar is browned nicely or grill until completely done.

 

I then season it some more with seasoned salt, garlic powder and black pepper.

 

Serve it up and enjoy! This is one of the most delectable recipes I have come across in a LONG time. I just had one I grilled yesterday and damn that was GOOOOOD!

I tried Coop's Spinach Ricotta stuffed chicken breast recipe today......  was damn fine even if I do say so myself!

Something good about left overs... always taste better second time around, especially if you have the munchies :)

Spicy Lamb Burgers 

Um, something is wrong with my keyboard since kitten walked over it, I can't type properly and bits aren't showing up when I post, so forgive the editing... you may have to highlight the blurb directly under the recipe.... (I'm a technophobe and don't know how to fix this til later when I ask one of the Things) Bah humbug!!!

  • 500g  minced lamb (our american cousins call it ground?)
  • 2 spring onions, finely chopped
  • Zest of 1 lemon
  • 1 tsp cumin seed
  • 1 tsp coriander seed
  • 1 tsp chilli powder
  • ½ tsp cayenne powder
  • ½ tsp cinnamon
  • pinch of Salt and pepper to taste
  • Throw everything in a bowl, mix and form into flat round burger shapes (ish) 
  •  
  • The great thing about these burgers - aside from tasting great is that they are so simple to make. I prepare them early in the day or sometimes the night before and then pop them in the fridge until I'm ready to cook them. They also freeze well.
