Came across a similar version of this on face book. Modified it a bit and damn this stuff is good!
Spinach Ricotta stuffed chicken breast.
4 chicken breasts (large)
one 8 0z container of Ricotta cheese
Big pile of fresh spinach leaves
Parmesan cheese
Sliced sharp cheddar cheese
Cook the spinach down until it reduces and softens, and mix in the container of ricotta cheese and mix it well. I throw in about 2-3 tablespoons of Parmesan cheese as well and season it to taste.
Slice the chicken breasts across about 1/2 an inch apart but not all the way through. Take a spoon and insert the cheese/spinach mixture into the slices the best you can. Cover with sliced sharp cheddar and bake at 400 for about 35-40 minutes or until done and the sharp cheddar is browned nicely or grill until completely done.
I then season it some more with seasoned salt, garlic powder and black pepper.
Serve it up and enjoy! This is one of the most delectable recipes I have come across in a LONG time. I just had one I grilled yesterday and damn that was GOOOOOD!
